Oh, I thought you were talking about regular cream/milk.

What's the indication that the coconut milk has gone bad? I don't remember it going bad for me, but I don't refrigerate it all that often.

I tend to use about an oz of the creamer at a time. So if I have a couple of cups a day, that uses up a pretty good chunk of the creamer.

Just received an email from Nutritional Weight & Wellness. They had a tip to save heavy cream from going bad...also works for coconut milk. Freeze what you don't think you will use right away in ice cube trays. Use the cubes in smoothies...or just melt one in a cup for coffee.

In my experience, it gets yellowish on top, then it gets a pink film (I think that's giardia, but I've seen this in Colorado where giardia is everywhere, even in the tap water and in the snow), lastly, it grows blue/green/gray mold.

Giardia is a parasite. I sure hope it isn't in my coconut cream!

I think this might be an urban legend. I was told that too. Or that acidic things will react with the can. That makes no sense since they've been in the can all along. Besides, they line cans nowadays with BPA, which is a reason not to use canned stuff... taking it out of the can probably isn't going to help much.

I think it used to be true when they used lead to seal cans, but it shouldn't be an issue nowadays.

Not leaving stuff in cans is because after opening the contents are exposed to air. Exposure to air along with alreadt acidic contents are quite corrosive. That could cause unprotected cans to begin deterioration introducing the corrosion products to the food. Today most cans are coated and probably not nearly as subject to that potential problem. We also use those special can openers, but don't leave anything in the can for more than a day or two.

I made a batch of this with:

13.66 oz can Thai Kitchen organic coconut milk (I think it's fattier than the non-organic)
2 T coconut oil
2 large egg yolks

I calculate the results having for one tablespoon:

33 calories
90% calories from fat

0.52 gm carb
0.33 gm protein
3.4 gm fat

Today I put a couple of T. of melted butter, a few pinches of salt, and some Caramel SF syrup (Monin).

Wow! ^-^ It makes a salted caramel coffee. Yummy!
