Default Pizza in a Cone



Amaze your friends!

Wow your family!

The only delicious pizza in an edible cone!

Get yours today....ay.... ay.... ay.... ay







Dude. I forgot the recipe. Sorry.

The cone:

1/2 zucchini, shredded (about 8" long)
1 eggs
1 cup shredded cheese (makes about 5 cones)

Preheat oven to 450 degrees F .

Mix ingredients. Make 4 8" circles on a greased cookie sheet (if there is extra dough left over, set this aside). Bake circles for 12 minutes. Let cool for 20 minutes, until patties are solid enough to lift carefully with a spatula. Flip and bake until they start to brown, or 5 minutes more.

Wrap around a conical shape (I used a stapled paper plate wrapped with parchment). Let cool on a cooling rack over night.

Filling:

shredded mozzarella cheese
2 Tbsp pizza sauce
chopped pepperoni, green pepper, onion

1 cup ricotta cheese
2 Tbsp Pizza sauce
4 black olives

Preheat oven to 350 degrees.

In a glass baking dish, press out any remaining zucchini dough.

Top with sauce, vegetable toppings and cheese. Bake for 15-20 minutes, or until cheese is brown and bubbly. Let cool slightly.

In a bowl, combine Ricotta cheese with 2 Tbsp pizza sauce. Let rest.

To assemble cones:


In bottom of cone, drop a black olive.
Top with cooled pizza casserole to about half way. Scoop 1/4 of the ricotta/sauce mix on top, smooth-side up. Top with black olive.

Optional: Offer basil pesto, pine nuts and additional sauce for 'toppings'

I use Wal-Mart brand pizza sauce (Great Value) and it is only 3 carbs per 1/4 cup. It's pretty low for a sauce, and you don't need much to make a pizza.

You can also use Hunts "No Sugar Added" spaghetti sauce.

My last entry:

Edible Cup (O Pizza)

1/2 zucchini, shredded (about 8" long)

Preheat oven to 450 degrees F .

Mix ingredients. Make 4-6 6" circles on a greased cookie sheet (if there is extra dough left over, set this aside). Bake circles for 12 minutes. Let cool for 20 minutes, until patties are solid enough to lift carefully with a spatula. Flip and bake until they start to brown, or 5 minutes more.

Drape over small shot glasses or a small glass measuring shot glasses (When I do this I also carefully pinch edges together to help hold shape). Let cool on a cooling rack over night.

Filling:

shredded mozzarella cheese
2 Tbsp pizza sauce
chopped pepperoni, green pepper, onion
any leftover zucchini dough


Preheat oven to 350 degrees.

In a glass baking dish, press out any remaining zucchini dough.

Top with sauce, vegetable toppings and cheese. Bake for 15-20 minutes, or until cheese is brown and bubbly. Let cool slightly.

Serve in bowls. Sprinkle with Parmesan cheese and garnish as needed.

I just found this thread. I'll see if I can come up with an entry this long weekend.

Although maybe Cleo wins by default for inventing The Zukecone. It wasn't enough for her just to be creative dammit, she has to go and actually INVENT an ENTIRELY NEW FOOD just to wipe out the competition. That Cleo. I'd insert a jealous insult here but I know she would just invent something that would make me regret ever getting up this morning, let alone washing my toes.

My 11 year old says she is up to the challenge. I told her Cleo was the competition. She said she's not afraid of you, even if you do wear a turban and know the future.

That was so funny I decided not to disenchant her.
