Default Fried Vidalia Onions

The Shriners were selling 10lb bags of Vidalias as a fundraiser the other day, and you know how I love to support a cause by eating. hehe If anyone hasn't eaten a Vidalia, they are about the sweetest mildest onion you can find. In any case, for the lsat three nights we've been frying a few of these gems a sa side dish and I thought I'd throw out the "recipe".

Ingredients
2 Vidalia onions, peeled and sliced 1/2" thick
3 TBS lard, tallow or butter

Melt oil in skillet over medium heat, throw in onions and sweat them until they start to get a little limp. Increase heat and carmelize lightly, that is, get them brown on the edges.

Serve hot with any number of main dishes. Beef liver and onions is the traditional favorite but these go with about anything.
