Default Cannoli pudding, yummy!

Hey everyone! If anyone likes cannoli's, you'll love this cannoli pudding, that I have addapted.

Cannoli Pudding

1 carton ricotta cheese, or mascarpone...make sure it's 15 ounces
1/4 c low carb chocolate chips, or some you make yourself
1/4 c pecans, chopped
3 tbsp splenda, or to taste
3 tbsp heavy cream

In a mixing bowl, beat ricotta until smooth. Stir in the chocolate, pecans, splenda, and cream. Spoon into pudding cups, and refrigerate until you're ready to eat. Makes 4 serv.

You could also garnish this with some chopped cherries if you want...to make it a little more authentic!

This recipe has 20.96 carbs for the entire recipe, or 5.24 per serving. I got this carb count using homemade chips. I use 1 ounce of unsweet chocolate, and melt it down with a little bit of unsalted butter and a little sweetner to taste. Then i spread this mixture on to some buttered foil or parchment paper pretty thin. When its dry i crush it up. Mocha chips would also be good in this recipe, make your chocolate as above, and add a little bit of instant coffee to taste.

PS the carb count is also based on using ricotta cheese, which is 7.48 gm carbs per cup, this recipe uses 15 ounces which is one ounce short of two cups.

I tried something similar today with the mascarpone
I had an 8oz container and thought I would use it instead of cream cheese but I wasnt crazy about the texture... it was kinda greasy tasting to me which surprised me, because Ive always loved stuff made with it.

I added some lemon zest a drop of vanilla and pistachio nuts to it instead of pecans and thought it was pretty good.

Its so rich and cramy I couldnt eat more than 2 bites worth but its in my fridge and I may use it as a filling for something.... maybe use a spoon of it as a filling for mock danish.
