"Rebuttals" was my word, and not really accurate. So if we instead "reply" (gag) to your question, what we imply--instead of caveats and the exclusive claim--is "Martin, your theory seems to contradict the fact of ...". This is a very Paleo (and post-Platonic) exercise. If we want to explain and answer the fat meat question using only chemistry and arithmetic, and reply using only chemistry and arithmetic, then you're not talking Paleo.
And Paleo operates with very few caveats. Instead, Paleo (and evolutionary theory) explains what otherwise might be mistaken for caveats as adaptation resulting from advantage. This is hard to explain without a lot of prep, but think of the last time you had a cold. Your sniffles and sore throat weren't the virus messing with you, it was your body's adapted response to infection. Your sore throat was a necessary and advantageous RESPONSE to the cold virus. If you have a virus but your body doesn't give you a sore throat in order to kill it, that doesn't make you healthier, it means that your human immune response has failed, and the virus will do whatever it does, instead of being destroyed.
Another way: Your argument sounds like, "X is true in the absence of Y and Z", whereas Paleo arguments look more like, "BECAUSE of the presence of Y and Z, X is the most likely answer". Harris's argument is starting to look more and more like, "X, because I like cheese, and not Y, because it would mean that someone else, who thought of all of this before me, is right, and not Z, because it would be too politically correct to acknowledge its contradiction to what I believe and adjust my theory accordingly".

You didn't see this coming? Dr. Medical-Industrial Complex comes out of nowhere to co-opt Paleo for his non-Paleo ideas and refuses to debate them in a public forum. We see these guys a few times a year, and it's always the same.
Lots of dodging. Lots of not showing off the knowlege of evolutionary biology and paleoanthropology he claims to have.
