My recipe:

20g salted butter
40g onion, chopped tiny
160g mushrooms
50g cheddar
2 or 3 large free-range eggs
celery salt
white pepper
80g celery sticks as accompaniment
10g onion extra, finely chopped, to sprinkle raw at the end if you like that

1. fry the finely chopped onion in the butter until it starts to go transaparent

2. slice the mushrooms, add them to the pan, stir frequently - first all your butter will coat them and the pan will be dryish, eventually they'll start to give off juices - while you're doing this grate or chop the cheese, and break & whisk your eggs

3. once the mushrooms are looking nicely done but not wizened, add the beaten egg

4. once the egg is nearly done, add the cheese, celery salt, and pepper to taste

Serve with celery stalks - it's a very smoky, rich recipe, the stalks add a refreshing crunchy edge - and sprinkle a tiny bit more raw onion if you like that flavour.

Probably not to everyone's taste but I love it!

love scrambled eggs with smoked salmon, delicious
my mother always does hers in the microwave,
but I like to cook them in a bit of butter, in a pan,
I love them on toast though, and wonder what I could have them on instead of toast?

I make a sort of flatbread using ground linseeds (flax in USA) in the microwave and have been having that with my scrambled eggs every Sunday brunch!



Flax Flatbread
1 egg (large in UK = medium in USA)
1 tablespoon melted coconut oil (butter or any oil/fat will do)
2 flat tablespoonsof ground linseed/flax seeds
1/2 flat teaspoon baking powder

Mix dry ingredients thoroughly then add wet ingredients and mix till smooth.

Pour onto a parchment circle (I sometimes just put it straight onto the microwave glass turntable) and microwave for about 90 seconds.

Remove and let cool on a cooling rack.

It won't fit in my toaster so I put it under the grill for a short time each side to toast it while cooking the eggs.

I'm a pretty mediocre chef, so some of his "hints" were pretty useful. My eggs are now better than most restaurants I've had scrambled eggs at.

Elizellen - I'm really looking forward to trying your "flaxbread" recipe soon.

So the key is to not overcook them, I cube a tomato, a little french shallot-fry in bacon grease, add my eggs and when just done turn the heat off and add some x-old cheddar, DELISH!!
perfect with a bit of flax bread!!

You can do them in a microwave (ooh, sacrilege). I whisk em with a fork (no milk or water), put em in a little plastic saucepan thing with a lid on, and stop the cooking to stir once or twice, which also tells me when they'll be done. Good organic eggs are best.

I agree, no such thing as too many eggs!

I also add water in place of milk. Works fine.

Really had nothing new to add to this thread, just wanted to subscribe to keep getting the great recipe and add-in ideas! lol

I first melt about 1/2 ounce of butter in a glass bowl then add 3 eggs and mix with a fork and zap for a minute.
Remove and stir, breaking up any lumps of egg by mashing them with the fork and return to the microwave.
I then zap for 30 seconds, remove, mash up any lumps and stir again then repeat if needed.
I stop cooking when it still has a little liquidy egg amidst the cooked stuff then stir again and mash till the whole is still soft but not liquid.

If cooking for my hubby as well I double the quantity of eggs and butter and do extra "stints" with the "zap then mash" bit.

I serve mine on my flax flatbread circle.

3 eggs
2 rashers of bacon
nob of butter
tex mex seasoning
grated mature chedder cheese

Chop up the bacon as big as you want it and fry it off to your liking then remove from pan.
whisk up 3 eggs and add tea spoon of tex mex to eggs and whisk in.
Melt nob of butter in pan and add eggs.
Keep moving until scrambled and throw your bacon back in at the death.
Dish it up and mix in the cheese

This is my new favourite breakfast!!! Creamy, slightly salty, a touch of spice.......but most oddly.....not eggy....ITS THE BOMB!!!!

good mornin' everybody.

i've been on a crispy fried chicken & egg guac tortilla breakfast kick this week so here's the egg dish i have been rockin' all week:

1 white lc carb chopper tortilla toasted in 1 to 2 tablespoons of the oil from my fried chicken then placed on paper towel to drain.

1 to 2 tablespoons of my homemade guacamole which i warm up for 30 seconds in the microwave then spread over the top of my toasted tortilla.

2 eggs scrambled in a grip of butter and then placed on top of the guac tortilla.

wala! one crispy fried chicken & egg guac tortilla breakfast.

I spray my skillet with non-stick spray and then add a tablespoons worth of butter. Crack my eggs in to the pan, bust the yolks with my spatula and mix them around until they are cooked. As they cook I add whatever seasonings I want. Easy peasy.
