I made a really yummy omelet yesterday that I'd like to share. I took two eggs, mixed them up with one teaspoon of cream, a few drops of vanilla extract, and a few drops of liquid artificial sweetner. I then mixed one tablespoon of ricotta cheese with a few drops of vanilla, a teaspoon of cream, and a few drops of sweetner. I cooked the eggs, omelet style, and just before then were set, I spooned in the ricotta mixture and folded the eggs over it. I let it sit in the pan for the few minutes with the heat turned off. Then I ate it with two small sliced strawberries. It was delicious! I felt like I was eating a combination of french toast and sweet custard (or maybe I've just been off regular desserts for too long!). Anyway, if you like ricotta and omelets and sweet breakfast treats, give it a try.
