I used tilapia today but this recipe is delicious with any mild-tasting fish fillet
.. such as sole, flounder, perch, basa .. trout .. or even catfish
Tilapia w. Bacon, Mushrooms & Onion
2 servings
4 slices bacon
2 cups sliced fresh mushrooms (approx. 5 oz/150g)
1/2 cup thinly sliced onions (approx. 2 oz/60g)
400g tilapia fillets (approx 14 oz), fresh or frozen, thawed
Cajun spice, or salt & pepper, to taste
Prep fish fillets by patting dry w. paper towels, then sprinkle all over with Cajun spice or salt & pepper. Set asde.
Fry bacon over medium heat till lightly browned. Remove to a plate w. tongs or a slotted spoon. When bacon has cooled to room temperature, use scissors to cut into small pieces. Set aside.
Keep skillet heat at medium, and do not drain off the bacon fat. Add onion slices and sauté until soft but not browned, two minutes or so. Add sliced mushrooms to the onions and sauté for a few minutes .. till mushrooms have shrunk and starting to turn golden brown. Use a slotted spoon or spatula to remove the mushrooms and onions (so remaining fat stays in the pan). Add to the cut-up bacon pieces; cover w. foil and keep warm.
Increase heat under skillet to medium-high. Add seasoned fish to remaining fat in the pan. Fry for a few minutes on each side until golden and the fish flakes easily with a fork.
Plate the fried fish, then spoon mushroom, onion & bacon mixture over top. Serve immediately.
