Smile Southwestern Pork Chops

Ran across this in an old cookbook, and just had to share! It sounds simple, but trust me, it is delicious. My parents loved it too!

4 (4 oz) boneless center-cut pork loin chops (any chops would probably work, but this is what the book said)

1/4 tsp salt (I used Lawry's red salt)

1/8 tsp pepper

olive oil

1 medium onion, sliced, seperated into rings

1 medium bell pepper, cut into strips

1 (14 oz.) can diced tomatoes

1 tsp chili powder

1. Sprinkle chops with half of the salt and pepper. Heat oil in large nonstick skillet over medium heat until hot. Add pork; cook about 2 minutes or until lightly browned.

2. Turn pork and add onion; cook and stir 1 minute. Add bell pepper; cook and stir an additional minute.

3. sprinkle pork and vegetables with remaining half of salt and pepper. Stir in tomatoes and chili powder. Bring to a boil. Reduce heat; cover and simmer 5 to 10 minutes or until pork is done.

4. Boil tomato mixture until liquid is reduced and of desired consistency. Pour mixture over pork and serve. Enjoy
Serves 4.

Pork chops is one of my favorites. I used to make a dish similar to this - called spanish porkchops, of course it had rice in it too, so I don't eat it any longer. Your dish sounds wonderful. I'll be trying it soon!
