I made these tonight for my seriously low carb hesitant "I don't like vegetables, and I'm not a big meat eater" husband. Big success. These definitely don't taste like "diet" food! I'm sure they will be a regular on the menu.

I make these all the time. I actually made some this morning to have for lunch. I like to do it with shrimp also. Have never tried it with fish but I will give that a try soon.

I made these the other night and I was AMAZED at how good they were!! Better than half the ones you can buy! I am a chicken finger lover and they've been something I have been missing SO much! I will be making these regularly now and sharing the recipe with others!

My husband (tall skinny drink of water) adores these! I keep it simple and mix together a cup each of almond meal and parmesan (the green can type), no seasonings except a bit of salt and pepper, dip in beaten egg (2) and fry in 1/4 in. of oil on medium high (must be preheated). This amount and method works for 3-4 cut up breasts or 6 thighs.

They are even good reheated in the microwave, although of course not crunchy. If you want reheated crunch, try the toaster oven!

As a hint these are wonderful in a deep fryer as well. Around 5 min 15 sec at 375 does the trick.

The hubby and kids prefer breaded (of course...sigh) so when I made tenderloins last night, I breaded the first batch and sauteed them over medium high heat w/ a little butter and olive oil, then when they were done, I rinsed out the pan, 'breaded' the remaining tenderloins in parm cheese, fresh garlic (minced), and a little sea salt, and OMG they were delish!

Unused McCormick Sweet Basil and Oregano Bruschetta Chicken seasoning mix in the Pork Rinds and Parmesan.
Absolutely delicious. My 13 year old son asked me to make a bunch of these and freeze them so he could have them when he came home from school!

Default Blew it!

Hi -

Did anyone else have problems with the fingers sticking to the bottom of the pan? I used coconut oil because that was what I had, and all of the cheese stuck to the bottom of the pan, none left on the fingers. But, I must say, the cheese that I scraped out of the pan was mighty tasty!

Was it the coconut oil? I wouldn't think so.
