your menu looks good to me- maybe you have dairy intolerance?
BUT, if you lost weight like this before going off plan for the wedding, it is more likely you just need to give it more time.
yes, soy has carbs, but very few.
you menu on thursday is really heavy on the dairy- i would try making a curry with tofu and veggies, instead sometimes.
or i might try palak paneer over riced cauliflower- yes it has cheese, but a lot less than the dish you described (which sounds delicious btw!)
