I like to inject my whole chickens with butter and cajun spice. I have to say it is one tasty chicken . A tip to cut back on the smoke problem is to fill the broiler pan with water, makes a big difference.

My wonderful mother in-law gave me a huge clay roaster for Christmas this year that makes the best roasted chicken I have EVER tasted.

I use, rosemary, thyme, basil, garlic and onion powder, salt and pepper. Rub olive oil on the chicken then rub or sprinkle the herb mixture all over.

Makes really yummy seasoned chicken!
