Tomato-fish-herb soup
I recently made a soup that tasted very well, and with fresh tomatoes in abundance, it could be the right time.
Here is what I did: brown 1 onion for a few minutes in oil, add 3 carrots in thin slices, keep on very very low heat let it go until carrots are soft, about 10-15 min. Cut 4 very large garden tomatoes (we got them from a friends garden, they were huge) or maybe 12 normal sized ones into pieces - I did not remove skin, and paid not much attention to the size of the chunks I cut. Add salt and lime juice (I have done lemon juice before) and some sweetener. Cook until tomatoes have fallen apart and gotten soupy. Put on low heat, add Halibut cut into bite-size pieces, a lot of thyme (maybe 5 whole springs - little trees, not sure how thats called) and a lot of parsley (I think it could also be tried with Basil but I have so far only done thyme - I wouldn't do both). Let simmer for 10 min. until fish is done but not fallen apart. Can be served with sour creme if desired.
