Lightbulb Another yummy avocado soup

I saw this on TV yesterday and adapted it to be a bit easier and to serve 1.

AVOCADO SOUP

1 small avocado
1 T sour cream
2 t lime juice
1 T salsa
1 sprig cilantro
1 cup hot chicken or vegetable broth
a few shreds of cheddar cheese to garnish

Mix avocado, sour cream, lime juice. salsa and cilantro as if you were making guacamole. Stir hot broth into the avocado mixture and mix well. Garnish with cheese.

(Normally, you would garnish with crisp tortilla chips.)

This was so yummy for lunch with some roast garlic chicken.

Oh Oh! Sorry I'm drooling. I love avocado! This sounds so good!

Thanks mushyroom! I'm definately going to try this, tomorrow though I have no avocado.

Lightbulb A very lazy variation

I love the Avoking guac that you buy frozen in a tub (I get the 4-pack from Costco) but have trouble finishing the tub before it turns brown.

I had about 1/2 cup left and it wasn't looking like it would last much longer so I mixed it with a can of hot chicken broth--it was really good!

Creamy, a little spicy, I never would have thought of this until I saw your recipe, thanks!

ps- I poured the broth right into the tub, and stirred it up, I really am lazy.

Ahh. Good one! I was just fixing to post another variation that I saw on TV and was checking to see if anyone else had posted an avocado soup recipe. I'll go ahead and share, but yours sounds much tastier (cilantro + salsa = yum!)

Amount...Measure......Ingredient -------- ------------ -------------------------------- 1 ....................Avocado 100......grams .......Greek yoghurt 1/4......pint.........chicken broth 1/4......clove........garlic 1........tablespoon...lemon Put avocado and Greek yoghurt into food processor and blend. Add in garlic and lemon juice and blend. Whilst blending, gradually add in broth. Season to taste. - - - - - - - - - - - - - - - - - - - Serves 2. Per Serving 176 Calories; 16g Fat (74.3% calories from fat); 3g Protein 9g Carbohydrate (net 6) 3g Dietary Fiber
