Default Slow Cooker Chicken w. tomatoes & veggies

I did this today and boy was it ever good! I put 4 boneless, skinless chicken breasts into the slow cooker. Added 4 stalks of roughly chopped celery, a bit of chopped red onion and about 2 cup of frozen veggies (broccoli, cauliflower and green beans) Then I poured a can of sugar free stewed tomatoes(found these in the Diabetic section of the grocery store) on top. I added a little Splenda to sweeten the tomatoes. I let it cook on Low all day while I was at work. I ate it on it's own and my husband had his over pasta with some grated Romano cheese on top. There is enough left for another meal for us. I haven't worked out the carb count but I don't think it would be very much. Just what's in the veggies and tomatoes.
I love using my slow cooker during the week and coming home to meal that is ready to eat. I just ordered a low carb slow cooker recipe book. So I'll be trying lots of stuff.

Sounds great. I love recipes that are simple, easy and tasty.
