Default Monterey Chicken

This should probobaly go in the recipie section but I thought I would put it here first, as I know we like good things to eat! Thought I would share, and most of you may already use this idea....

Monterey Chicken
(I had this once on this WOE at a Dixie Cafe, then I started makin it at home)

Any Kind of Boneless Skinless Chicken Breasts

Season however you like and bake them, covered with foil.

I pull mine out and flip about halfway through.

Then-Take Tomoatoes and chop

Pull The Breasts out and turn your oven to broil-

Top the Breasts with-Real Bacon Bits,Cheddar Cheese,Tomatoes then broil for just a couple minutes until starting to brown and the cheese melts.

OHHH so good! Very Low Carb as well. Leftovers are excellent on the top of a salad the next day ~ lunch!

I've made the same thing except....add sliced jalapeno peppers.

If you like it spicy, they are wonderful!

I cook something really similar except I brush the chicken w/ LC bbq sauce twice while cooking.....
