Chili-Mushroom Chicken
I saw this in a Campbell's soup magazine ad, and thought I should share it because it gets a huge from both hubby and me.
Ingredients:
chicken breasts (however many you need)
1 can of condensed mushroom soup (I use half because I just make 2 breasts for hubby and me)
1/2 can of water (essentially just 1/2 the amount of the soup)
chili powder
shredded cheddar cheese
Brown the chicken in a little oil in a pan over medium heat. Meanwhile, mix soup and water together in a bowl (trust me, it's a lot easier than trying to stir it together around the chicken), then add chili powder to taste (we like it with a little bite). Pour soup mixture over chicken, and simmer for about 10 minutes, or until sauce thickens, stirring regularly and "basting" the chicken with sauce. Before serving, sprinkle cheese over top.
