Hiya compaddict, I took a look and from what I can tell they have some carbs from tapioca starch but probably a good start and drift away from wheat noodles. There was a big long thread that talked about different brands and things to do with "Shirataki Noodles" here...
And a picture of some Pho soup I made with them for starters. As far as I got with the 100 percent shirataki noodles was to put home made alfredo and chicketn on them (pictured as well) that didn't work so good with the texture of the noodles but your find and some of the ones that have tofu in them might work better for that.
