Um... no recipe.

Just mayo, some parmesan cheese, and whatever for hot spicy. I used a little of Greene's Atomic Habernero sauce and a little cummin. Roll the chicken in it (I put a little left over on top of each piece), then bake in the oven. The mayo and cheese make a little bit like a breading, and then what ever spices you put in does the rest.

Sounds like it was burger night!
We did smoked sausages, red beans and rice for the carbers, and celery "spaghetti" noodles with butter, garlic and parmesan - YUCK!!!!

McDonald's double cheeseburger minus the bun. I know, not a healthy choice, but it was that or starvation.

Edible Cup (O Pizza)

1/2 zucchini, shredded (about 8" long)
1 egg
1 cup shredded cheese (makes about 4-6 cups)

Preheat oven to 450 degrees F .

Mix ingredients. Make 4-6 6" circles on a greased cookie sheet (if there is extra dough left over, set this aside). Bake circles for 12 minutes. Let cool for 20 minutes, until patties are solid enough to lift carefully with a spatula. Flip and bake until they start to brown, or 5 minutes more.

Drape over small shot glasses or a small glass measuring shot glasses (When I do this I also carefully pinch edges together to help hold shape). Let cool on a cooling rack over night.

Filling:

shredded mozzarella cheese
2 Tbsp pizza sauce
chopped pepperoni, green pepper, onion
any leftover zucchini dough


Preheat oven to 350 degrees.

In a glass baking dish, press out any remaining zucchini dough.

Top with sauce, vegetable toppings and cheese. Bake for 15-20 minutes, or until cheese is brown and bubbly. Let cool slightly.

Serve in bowls. Sprinkle with Parmesan cheese and garnish as needed.

Tonight, it'll be some very fatty corned beef, a boiled egg, steamed cauliflower, one bite of dried apple. For snack, a little jerky, a small handful of walnuts, and maybe a half cup of unsweetened apple sauce with cinnamon.
