Default Well, I upped the fat intake and lost pounds!

I realized that the fat intake in my diet was too low. So yesterday I increased my intake. I had a couple extra peices of bacon for breakfast, had a couple slices of cucumber with ranch dressing for lunch with my can of chicken meat. Bought a routissary chicken from Costco and ate about a third of it for dinner, skin and all, had a couple slices of cheese. Got on the scale this morning and had lost another 2 1/2 pounds! That makes 10 pounds now since starting induction 2 weeks ago today. I'm a very happy camper....

Good job! I'm a returning low-carber, and you've really inspired me with your willingness to share your trials.

Well, just keep that little train "a chuggin" referencing your ticker of coarse, and you'll reach your goal. I for one was amazed at what adding the fat to my diet did. I was actually afraid the morning I stepped on the scale, that I had eaten too much the day before, and was expecting to see an increase in my weight. Imagine my delight when I had lost another 2 lbs!!! That's a total of 10 lbs in 2 weeks!

This is my biggest problem Will-I just can't stand many veggies. I am restricted to a narrow range of salad, cukes, green beans.

Some of them it's the texture that bothers me, some of them it's the taste. But it's my downfall (other than cheating) got any good recipes?

Mashed Fauxtatoes

One medium cauliflower
4 oz. cream cheese
butter
seasonings to taste (seasoned salt, pepper, herbs?)
grated cheese
real bacon bits

Microwave the cauli until very soft. Make sure it's nice and dry. Mash it up with the cream cheese (and some butter if you want). Use a food processor if you like it creamier. I just use a potato masher. Put the grated cheese and bacon bits on top with dots of butter, and stick it in the oven at 350 until everything's melty. How easy is that?

No, I am only eating the salad, twice a day, no vegies.

YES! Thank you. I'm going to try this when I get home (no potatoes down here this time of year)

Do you think Mr Nag would like this? He's a meat and potatoes kinda guy, but he does like veggies more than I do. He he he, I guess I could make it and see if he notices the difference.

As long as he doesn't smell the cauli cooking, he might not notice that it isn't "the real thing." Mostly you taste butter, cream cheese, cheddar, and bacon. What's not to like??
