Default what to put on Miracle Noodles

I just ordered some Miracle Noodles from Amazon and now I'm wondering what I will put on them as I have stopped dairy so that limits things.

What can I put on them that's low carb?

I stir fry vegetables, or vegetables and meat, in coconut oil and then add the noodles, along with some seasoning (salt, herbs and spices). Just make sure to rinse the noodles well. I like the way it tastes but not every seems to.

I'm not a big fan of the texture of them, unless they're the tofu version, so I like to "hide" them behind a sauce that out-does the noodles, if that makes sense. My favorite is a spaghetti sauce recipe that I got from my first boyfriend's mother decades ago. I can post it later. It's fantastic, and it's super-thick and chunky. You could almost eat it out of a bowl like chili (in fact, I'm pretty sure I've done that.) I cut the noodles up with scissors as if you were cutting them for a toddler, add lots of parmesan cheese, and voila, I don't really notice the weird texture of the noodles.

I also made pad Thai out of them once, with lots of bean sprouts. That worked pretty well. The recipe is in the Kitchen Forums somewhere. I'm on my way out the door, or else I'd find it for you. I'll come back tonight.

(ETA) One of my favorite foods growing up was tuna casserole (just tuna, cream of mushroom soup and noodles) and I made a tasty version of that. Lots of sauteed mushrooms in butter, cream, let it thicken in the saucepan somewhat, add your tuna and noodles, voila.

in no particular order, here are my dairy free suggestions:

1. in chicken soup
2. with chicken or shrimp and veggies in a green or red curry
3. in an asian peanut sauce- i mix soy sauce, unsweetened seasoned rice vinegar, pb, a little splenda, and a little crushed red pepper. i would add veggies/chicken or shrimp to this as well
4. pasta salad in vinaigrette with veggies (I would cut them up before hand)

I'd do something Thai with them. The peanut sauce or curry would be great. Or make it into Pad Thai.

Nancy's idea has me drooling. But I saw the video on those noodles and they creeped me out. Think I'll pass...lots of other things to put Thai curry peanut sauce on.

I found a coconut chicken curry at Costco with only 6 net carbs, which we had for dinner tonight. I used the shirataki rice, not the noodles, but the technique is the same.

Open the package. It smells terrible. Pour into a colander, and rinse well. Dump in a microwave safe bowl, and nuke for a minute. Rinse again. Nuke for another minute. Rinse again. You can either nuke once more, or use then, but the smell is gone!

Put some fat (I use bacon fat) into a frying pan, add the noodles/rice and whatever seasonings you want. I use a very little onion, some garlic powder, Kosher salt and fresh ground pepper. Then stir together, and let cook over med/med-high heat till you hear the shirataki start making popping sounds.

It improves the texture, and it's no longer soggy. It'll now soak up your sauce, instead of making it less appetizing.

[edit] In all fairness, that method comes from LindaLove, a poster here who is also a chef.

Well 1DogDay, I've been waiting for this post all my life I love, love these in stirfry and soups. Most of the stuff I know how to make is asian influence for them. I've also heard they go good with a high fat white sauce. I can't quite get my head wrapped around them using a marinara but that's just me, and I eat weird stuff!

Ha! We'll since 1DogDay asked posted he question, do you, 1DD, see one of these 3 that you would want written down? I think the simplest one is the Tom Ka - you can put what ever protein in it. Or Liz, if you see on that you are interested in I can do that one too. The phake Fho uses home made bone broth so that's a good one if any of you guys are doing that. I suppose you could use some other kind of beef, chicken or seafood broth too, it would be good!

I'm off to the doctor for a check up to see if my cooking is helping my health. Maybe I should hold off on sharing till i get back the results

I use them in homemade chicken soup and sometimes just stir fry them with veggies and a bit of leftover meat. I much prefer the tofu noodles which are also very low carb. Those I use like regular pasta with either a red sauce or just butter, parmesan and herbs (usually basil/parsley mix).

Here's the spaghetti sauce, and here's the pad Thai. I think you could sub those noodles into any pad Thai recipe, though.
