Yes, I'd be interested to hear how it works out with chicken too, since I'm not a fan of tuna either. I'd try it, but I'm on a candida cleanse right now.

Rosebud - what do you mean by "dryish" for the tomato/green onion? Is the green onion necessary for the taste of the dish? or could I substitue some onion or garlic powder? this receipe sounds wonderful & I just bought a nice head of cauliflower. I am going to try this tomorrow!

Hi Beth,

By "dryish" I just mean to simmer the tomato until as much liquid as possible has evaporated. Otherwise the whole thing gets way too "wet" - sloppy even.

You can easily use onion (or garlic, or both) powder, or you could omit it completely if you like. It's just a matter of taste as to whether or not you want to include some onion flavour. Not really essential to the taste of the dish. I tend to use ordinary onion, just not too much of it. It has more carbs than green onion, but is still on the Atkins list of allowed Induction vegies, so it just depends on how many carbs you wish to "spend."

I have made this recipe, but substituted leek for the green onion, as it is difficult to find green onion here. My two year old loves it and so do I.

I tried this last night and it was great! I'll do a few things differently next time, though - my tomatoes were really juicy, so I'll start them simmering first. Maybe it's just a cheap brand. I think I'll stick a layer of cheese in the middle next time, too.

Great for days like yesterday where I couldn't make it to the grocery store and had to live off canned and frozen food.
