BIG thank you to fitness model Jamie Eason for this recipe, it's saved my bacon (lol) at breakfast time.
I modified it slightly so it was more low carb friendly.
1 cup oat flour (I use oat bran)
2 scoops vanilla whey (I use Musashi Low Carb)
2tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/8 tsp allspice
1/8 tsp nutmeg
4 egg whites or 2 eggs
3/4 cup sweetener, cup for cup equivalent to sugar
(you can cut a lot of carbs if you use a liquid sweetener)
8oz baby food carrots (I use 2 grated carrots)
4oz water or almond breeze
Jamie's original recipe: 94.4g the whole batch (11.8 serve)
My version: 70g the whole batch (8.75 serve)
Or with liquid sweetener: 60g the whole batch (7.5 serve)
I make a batch on Sundays when I shop, and cut up the slices for a convenient breakfast at work plus one extra!
