I'm going to be lazy the rest of the week.
I prepped a 3 bean chili to use as a salad topper.
Great value organic tri-bean blend, rotel tomatoes, a little corn and various Mexican spices.
It comes out to 18g carbs per 1/2 cup.

For the salads I'll use 1/2 cup over chopped romaine, add 4oz diced chicken and top it with 2T shredded 2% Mexican blend cheese, 2oz avocado and 2T Siggi's plain icelandic yogurt.
I may toss a couple of olives in as well.

I didn't have a salad yesterday ... the weather is quite cool this week. DH wanted curried chicken, and I obliged. Still lots of veggies albeit cooked.

Tonight's salad, kind of boring. Red lettuce, tomato, cucumber, three-cheese ranch dressing, bacon bits.

Thanks for that vid. Pretty much all of those greens are available at even my smallest nearby discount grocery store. I don't buy them very often.

I'm not into smoothies, green or otherwise. Every time he referred to a 'savory smoothy' for the bitter greens, I replaced it in my head with "sauteed with onions and bacon".

Haha, wheat grass is what our kitty cat grass is! I grow it for our kitty and I have to hide it in the spare room window while it's growing. (I find it odd that it's labelled as gluten-free. Separate thread, probably)

My into to wheat grass is for juicing. It was a solution to poor health from poor eating back in the 1900'2 by a woman that cured herself of gangrene when the docs wanted to amputate both legs due to an unfortuante injury. After reading her exploits I have loooked upon gresh greens ,, including sprouts, with a new respect for great health benefits.

Sauted greens for the savory is my choice too!! The mustard greens grown last year reseeded and are a plenty right now---sauteed or salad only; lol

Green smoothies are an acquired taste. My kids steal mine! kale, apple, celery, cuke, lemon crystal lite. AND ICE! oh, and a straw!

I remember now why I fail miserably at meal prep: I hate eating the same thing more than 2-3 days in a row

My mother kept a bowl of salad going by replenishing it with new vegies and greens... it was like eating a different salad everyday, lol.

It is also why I purchase a varity of salad dressings----changes the taste of the same ol' greens instantly. lol

Yesterday's salad: at work, pretty much like the first one I posted. Baby spinach, tomatoes, a bit of purple onion, lots of crumbled bacon, bistro sauce as the dressing. On the side: a boiled egg, a few pickles, 1 oz cheddar cheese. Really filling lunch.

Dottie, I can relate to not wanting to repeat the same dishes... and why I don't like buying a giant bunch of greens when my DH doesn't care for them. I try to get veggies that I can mix up, and both of us will eat and it won't get tossed into the compost. Cole slaw mix is one of my favorites for that. I could do actual cole slaw one day, sautee it with some onions and bacon the next day, and do Chinese style after that - sauteed with onions, sesame oil, and soy sauce. And the other thing I like about the cole slaw mix is that it usually lasts in the fridge for at least a week or two.

Dottie, I, too, find meal prep a bit much, sometimes.

I like making marinated vegs, that way I can just put them in a little bowl, and call it my vegs/salad for the day.

I need something else super easy. The 2-3 days is my limit, too.

I've got marinated green beans, and some pickled okra (those are store-bought) on hand.

Kristine, thanks for the nice ideas with the cole slaw.

Perhaps green beans and beets today....

There's a woman on youtube "downshiftology" that does a prep, but individual ingredients, not set meals, so you can mix and match for the actual meals.
Her channel is pretty interesting.

OMG, this woman is amazing. All the things I have been looking for on one channel!

Found the glass storage containers that I have been dreaming of too--out with the plastic!!

I definitely need her level of "zen".......been watching a great doc on balancing our lives for great health. Her first suggestions are great foods and finding "zen" thru meditation, spas, etc.
