positive effects of eliminating pasta and rice
In May of 2016 I came home from the physicians office knowing I had to make serious changes in my eating. At that point I decided to cut out pasta and rice. I really did not eat much bread so I did not consider it a problem. Over the next year I was jumping diet to diet and trying to figure out how to get the weight off. I tried diet pills, mega vitamins, drastic calorie reduction and more nonsense only to lose/gain/lose/gain. Nothing with stability.
In that course of time I never did go back to indulging in rice or pasta. I was eating them 3-4 times a week and cut back to maybe twice in a 2 month period and even then it was in reduced serving sizes. This was the only consistent change I kept up to where now I never eat rice or pasta and do not miss it.
My yearly doctor's visit shows the results of this. Again, I had been off my rocker shoveling anything bad in my face except rice and pasta and my cholesterol results have changed for the better. I am no chemist to understand the processes but I whole-heartedly believe its why the numbers are better.
May 2016 - chol 228, Trig 343, HDL 53, LDL 106, A1C 6.4
June 2017- chol 187, Trig 162, HDL 58, LDL 97, A1C 6.3
I have gained some weight back but still kept off 20+ lbs during this time.
My kidney function also improved.
I am more confident and convinced that low carb is the answer despite the naysayers. My next goal is to get that A1C down.
