Thumbs up The best SF/LC/GF chocolate chip pecan cookies I ever made!

I just made a batch of these cookies and they were outstanding! You would never know they had no flour in them, or real sugar. My husband had no idea they were sugar free or low carb! I promise you will LOVE these!

SF/LC/GF Chocolate chip pecan cookies

These are by far the BEST sugar free, gluten free, guilt free, low carb cookies I have ever made!

Preheat oven to 350F
Line a cookie sheet with parchment paper

INGREDIENTS:

2.5 cups Almond flour
1 tsp Baking powder
1/4 tsp of kosher salt
1/4 tsp (heaping) Stevia or 10 packets of Splenda
1/2 cup melted butter
1 tbsp Vanilla
2 Eggs
1/2 tsp xanthan gum
1/2 cup chopped pecans (or walnuts, macadamia, what you like)
1/2 cup dark chocolate (I use 80% cocoa bar by Lindt chopped up) or SF Hershey's chocolate chips

Approx 40 cookies from the batch then here are the approximate numbers per cookie using the walnuts:
Calories 80
Carbs 2
Fat 7
Protein 3

I wish I could say I liked them. I really had high hopes. I followed the recipe exactly as posted. I realize everyone has their own tastes, so many may like them. I will eat them, I don't want to waste the ingredients, but I won't make them again.
