Just wanted to post a favorite seasonal dessert for ya'll, that might get ya through the Thanksgiving and Christmas season. When everyone else is eating pumpkin pie, you can have PUMPKIN MOUSE and not worry!
Pretty easy to make. You can adjust the amounts to your own taste.
Stevia to taste (some may use Splenda)
Vanilla extract
One 16 ounce container heavy cream (with no ingredients but cream!)
Pumpkin pie spice to taste.
1 to two 16 ounce cans pumpkin, or prepare it fresh.
Put canned pumpkin, pumpkin pie spice, and vanilla into large bowl and refrigerate about an hour.
In separate bowk, whip the stevia with the cream until it is whipped cream texture. Then slowly fold the whip cream into the pumpkin til it's blended well, not causing it to fall.
Pour into dessert bowls and refrigerate and enjoy!
You can make a mock pie crust with crushed pecans and a little stevia or other sweetener, press into glass pie plate, then spread mouse into it, fridge, then eat like a pie.
Change it up. But the basics are canned pumpkin, heavy cream, stevia and vanilla, pumpkin pie spice.
I'm going to try a pumpkin cheesecake this year, with cream cheese and canned pumpkin. Should be interesting if nothing else! Enjoy!
