Post Bread and Butter Pickles

I had a craving for bread and butter pickles the other day and there are no low carb ones in this area.

I put 2 cups of apple cider vinegar in a saucepan along with 2 tsps of pickling spice and 1 tsp of liquid splenda. Bring this to a gentle boil and add 4 to 5 cups of sliced cucumber. Bring back to boil for a few minutes and reduce heat. Simmer 10 minutes and remove from heat. Let cool and put in fridge overnite.

I used to make sandwiches with just buttered bread and a good layer of bread and butter pickles.

This time around I sandwiched them between 2 slices of cheese and ate them with the juice dribbling down my chin.

They were soooo good.

My palate did not even know that they were not high carb...and I won't tell it.

hmmm, just the thing i've been craving. i've never pickled before(been in one on occasion), but i think i could boil vinegar.

Mt. Olive makes great Bread & Butter pickles with Splenda. Mm mmm mmm, I'm having some right now with chicken salad.
