Does anyone know of a low-carb eggnog recipe?? It seems to me that it must be possible, but i don't know how and would love to have some on hand for the holidays!

So I may not be very helpful with this...but whenever I make eggnog (LC of course) I use egg beaters (not really open to the idea of using raw eggs) some cream, water, and pumpkin pie spice. There are other recipes that do use raw eggs and you cook it over the stove, but you have to be vigilant that the stuff doesn't start to get all custardy or scrambled.

See how helpful I am (no measurements, no carb count)! Sorry!
For me the recipe is highly variable (some like more spice/others less). I experiment until I like it!

Here's a "real" recipe!

Ingredients:
1/2 cup splenda, plus
2 tbsp splenda
2 eggs, separated
1/4 tsp salt
2 cup heavy cream
2 cup water
1 tsp vanilla extract
1 brandy or rum flavoring, to taste
1 tsp eggnog flavored oil, (optional)
1 = (lorann or amish brand)
1/2 cup whipping cream, whipped with
1 sweetener of choice
1 ground nutmeg and/or mace


Instructions:
Beat 1/2 cup Splenda with egg yolks. Add salt, stir in 2 cups cream and 2
cups water. Cook over medium heat, stirring constantly, until mixture
coats a spoon. Remove from heat and allow to cool.

Beat egg whites until foamy then gradually add remaining Splenda, beating
to soft peaks. Add to cooked mixture and blend thoroughly. Add vanilla
and flavoring(s). Chill at least 3 to 4 hours.

Pour into punch bowl or cups. Dot with "islands" of whipped cream.
Sprinkle with nutmeg and/or mace.

This recipe yields 4 servings; 4 carb grams per serving.

If you want to be lazy, this year I found Carb Countdown Egg Nog in the stores. It doesn't taste too bad.

Do a search on the internet and you will probably find tons of homade egg nog recipies that are low carb. Eggs being a staple and all. I've made my own up a few times with different recipies.

OMG!! I'm going to have to find this. I really loved CarbCountdown products until they started changing the formula (upping the carbs, keeping fat low to appeal to low fat dieters).

I used this one last year and it was delicious.. I used vanilla davinci instead of hazelnut and used rum or brandy extract instead of the vanilla (think it was the brandy) and added a sprinkle of nutmeg.

Ahhhh flavours of what sorts of foods? Sorry I've never heard of lorann and I thought 'Amish' was a type of people.

Flavor oils are more intense, stronger (so you use less) but are otherwise used the same as extracts. To flavor whatever you want. Like you use Vanilla Extract, or Orange Flavor/Extract; many examples in recipes here on the site, just like the eggnog recipes.
