Psyllium made pretty good
Psyllium is great for fiber with no carbs .... but UGH ! So I invented 2 quick and pretty yummy ways to consume it.
A) Sugar-Free Jello .... make as directed but add 1-2 T psyllium to the powder before you add the hot water. Stir ... add cold water ..... later take it from the refrig a few times and shake it up. 0 carbs 10 grams soluble fiber
B) Sugar-free Chocolate Pudding. make with 1/2 c whipping cream and 1 1/2 cups cold water..... but add 2 T of psyllium to the powder before you start. Beat with a wire whip for a while. Refrigerate. It is like chocolate tapioca. 8 carbs for 1/4 of batch. You can top with a little squirt of canned whipped cream (.5 carbs)
