Default New Orleans Creamy Shrimp & Veggies

Hi everyone, I'm new here but I came up with what I think is a pretty tasty recipe and wanted to share. I call it New Orleans shrimp because it kind of reminds me of a cross between etoufee and shrimp & grits. It's somewhat similar to ElleH's Cajun Shrimp, but with more veggies. Once you get the shrimp cleaned and the veggies chopped, it goes really quick. Hope you enjoy!

New Orleans Creamy Shrimp & Veggies
2 cups raw shrimp, cleaned
1 medium green pepper, seeded & chopped
3 small "leafy" inner celery stalks, chopped
1/4 small onion, chopped (or use onion powder to save a few carbs)
2 green onions/scallions, sliced & green tops kept separate
2 Tbsp olive oil
1 Tbsp butter
4 ounces cream cheese (I use Neufchatel), cut into 4 or 5 large chunks
1/2 to 1 cup chicken broth
Spices to your taste (Old Bay, sugarless Cajun seasoning, cayenne, celery/seasoned salt, garlic powder, few dashes of curry powder)

Hot cooked cauliflower "rice"

Saute veggies (including only the white parts of scallions) in oil & butter until as tender as you like, adding spices about halfway through. Stir in shrimp and before they turn completely pink, add cream cheese and stir until melted. Gradually stir in chicken broth until sauce reaches your preferred consistency. Simmer 1 minute to blend flavors, then pour over cauliflower "rice". Sprinkle with reserved green onion tops.

2 Servings.
