I've never really thought salt makes me thirsty. When I used to eat potato chips and pretzels, I would, however, find that my mouth would get gritty and that a diet Coke would be just the ticket to wash it all down. But actual thirst? Not really.
I'm a saltaholic. I love salt and left to my own devices will put it on everything except cinnamon-y tasting foods. As far as water retention, I need to keep my salt in balance with potassium and because avocados are the only high potassium food I eat these days, I do supplement potassium to keep things in balance. Also, I only use the pink or grey seal salt. I think the sodium chloride table salt caused edema in me.
All that said, there's no question that I have A LOT less water retention when I don't eat carbs. I suspect if I only ate "normal" amounts of salt, I wouldn't need to supplement potassium.
