Just my two cents (with full awareness that this horse I am beating is no longer with us).
I think it's difficult sometimes to shuffle off the indoctrination of the diet industry, the after-school specials, the government posters, and the well meaning nutritionists. All of whom say "EAT YOUR CARBS, AVOID FAT!"
If you're here, you've realized that eating your carbs and avoiding fat isn't working for you. You eat your carbs, you avoid the fat and you get fat, moody, inflamed, and sick.
Give it some time. You don't have to eat pork rinds. I eat them, but I'm not terribly happy about it. I mean they call them PORK RINDS. Like they've been peeled off of the fruit of the pork tree. Oranges and watermelons have rinds. Pigs have skins.
That having been said. They do taste pretty darn nice with a cheddar bacon cream cheese...
