Default Kimberly's Bacon & Cheese Muffin

I took the basics of the 1 min Muffin recipe and tweaked it a bit, to me the taste is a cross between Red Lobster Cheese biscuits and a Quiche, hope you all like it.


2 tsp butter
1/4 c Soy Flour
1 tsp sour cream
1/2 tsp baking powder
1 egg
1 packet of Splenda
2 slices of bacon (cooked and crumbled)
1 slice of American Cheese (cut into little pieces, you can use shredded cheese also)
Dash of Garlic powder (you can adjust this to your own taste) this brings all of the flavors together!

Melt the butter in a large oversize mug-approximately 30 secs in microwave. Add all of the ingredients and stir well so that everything is distributed evenly. Cook in microwave for 80 seconds (microwaves varies so you may have to adjust the time) Immediately turn out muffin onto a plate and ENJOY!!!

Soy Flour... 5g carb
Sour Cream....1 carb
Cheese......0 carb (according to packaging)
Bacon........0 carb
Egg............1 carb

I made these last night. They were really good and fill you up! I wish I could make them a little more fluffier...anyone got any suggestions
