As an alternative to the Special K you could try this:

Greek Yogurt (the one with the highest fat)
Whipping Cream (ditto)
Flaked almonds
Dessicated coconut
Chopped fruit of your choice (I use 4 or 5 small strawberries)

Don't make a lot because it's more filling than you'd think. I don't know measurements but I start with 2 big heaped tablespoons of greek yogurt, then pour in some whipping cream to make it thinner. If you really really need to you can add a bit of splenda but I think it's better to de-program yourself from the taste of sweet things. When I have splenda in stuff or eat anything with sweetener in it it makes me crave foods like the way ordinary sugar does.

It's not carb-free but it'd be a lot better than Special K which isn't too far from just eating a bag of sugar

Mock danish, well kinda. I didn't have cream cheese because I had made a lemony cheesecake pudding, so I used a big scoop of cheesecake pudding instead of plain cream cheese. I also threw in some blueberries and when it was almost done cooking I put a spoonful of the cheesecake pudding mixed with SF jam into the center. It turned out really good with a nice gooey center. The only downside is it is so hot that I had to wait for it to cool before I could eat it.

scrambled eggs with queso fresco cheese and 1 slice smoked turkey. decaf with 2 oz. half and half.

thanks for the info on your salad dressing. I'm afraid that one wouldn't like me, can't have eggs. Also I don't understand why she uses nonfat milk and Xantham gum?

In case you'd like to try another one, here is Annettes blue cheese:
100g Roquefort or Bleu d'Auvergne or Stilton,
100g g full fresh cream (our own, but of course your local farm is as good)
black pepper, half a tsp of walnut oil and two or thre leaves of fresh coriander ( use parsley if not available)

I had a feta cheese salad (salad greens, purple cabbage, celery, cherry tomato, grated beetroot, feta cheese and olive oil, plus celery & leek soup to drink.
