Default Dairy free mashed cauliflower?

Does anyone have a tasty, dairy free mashed cauliflower recepie? I'm trying to get a creamy texture.

I don't know, but I'm eager to see what others suggest.

I haven't tried it, but some ideas spring to mind:

- Using a high-speed blender, like Vitamix, would be better than the food processor, but it will be a little wet, like baby food, rather than stiff like potatoes or creamy like cauli mash with cream cheese.

- I wonder how it would turn out if you tried to enrich it and stiffen it with egg yolk or whole egg.

- I wonder if pureeing avocado with it would make it creamy.

- I'll bet bacon fat or duck fat would taste good.

- I'm imagining the plain puree as a puddle of baby food. I'll bet you can tighten it up with a little glucomannan flour or one of the vegetable gums, if you don't mind something a little processed.

Hmm, funny you shoudl say that,Bike2work, I made a mix of culiflower, turnip and avocado in the blender last week and it was good and creamy. I don't like to add cream mainly because cooked cauliflower, Now that being said, I have also baked cauliflower that reduced the water in the cauliflower.

The avocado would make it creamy, but the green color would gross me out. I wonder if adding in some coconut milk along with some chicken broth might work? I haven't tried it. I've stayed away from mashed cauli since I had to cut dairy. Tasted SO good w/cream cheese, heavy cream and cheddar.......

Yes, but it would taste like coconut. I love coconut but I don't think I'd want it in mashed cauliflower unless I was doing a meal with tropical flavors or curry, and in that case I don't think I'd be making cauliflower mash to go with it.

I would add something to give it a bit of umami flavor that cheese has. Things like fish sauce, soy sauce, or perhaps some smoked salt. Allison's ideas were good too. Oh, maybe add some caramelized onions.

I like to add melted chicken fat (collected from roasting chicken) to steamed cauliflower + some salt and whiz it in my Magic Bullet.

I think it would depend on how much you used. I made my turkey gravy using broth, guar gum and a little coconut milk and it tasted excellent. No coconut flavor....just looked and tasted like traditional roasting pan gravy. If I had some cauliflower I would give it a try today. Maybe tomorrow....adding Allison's idea of bacon fat and Nancy's idea of caramelized onions.

I'm thinking a spoon of chopped olives. And some chopped onions.


I don't find the coconut milk I use to have any coconut flavor. It is the type in the carton, not in the can. Can you use a vegan butter sub such as earth balance?

i've never added any liquids to my mashed cauliflower..
i don't like watery mash.
i've always moistened it with cream cheese or butter...
or bacon fat..

i've never used liquids... no plans to ever include liquids in my mashed cauli...

This looks really good and kind of what I was thinking. Going to give it a try! I like the idea to try adding mayo for creaminess as well. That was my thought with the coconut milk. Thanks for the link! I didn't know about this website.
