hhhmmm....very interesting. Would make for an expensive cauli mash, but might be worth it for a special treat. I may try this. Thanks for sharing, Allison.

I wanted to try the cauli/broth/mayo/bacon fat/onion concoction today, but ds made tacos instead of burgers.

Okay....I finally tried this tonight. It's the first time to do a mashed cauli since right after going dairy free...

I had a 12 oz bag of frozen cauli. Added it to a sauce pan. Added a 14 oz can of low sodium chicken broth (would be better with home made). I simmered it until all the broth was gone and the cauli was beginning to stick to the pan. The cauli was basically mush. I transferred it to the food processor and added about a TBLS. of bacon grease and about a TBLS of mayo and generously salted and peppered it. I was concerned about the mayo being heated. Processed it and it tasted FABULOUS! Transferred it back to the pan to re-warm and see if I could thicken up a bit. It thickened nicely. It tasted like mashed taters and gravy! LOVE it!!!!

I didn't bother with the caramelized onions, but they would only make it better! Still would like to try it with the coconut milk just to see.

Are you feeling better and have you been able to experiment with them yet, Scarlet? I'm really pleased with the results I got tonight.

I found it so yummy that I had to start making individual servings! So I steam 1 meal's worth of frozen cauliflower, add fat, herbs, salt and whizz them in my mini blender (Magic Bullet).

That's a GREAT idea! Much easier than dragging out the big food processor. And, yeah, I ate almost the entire batch that I made. It was really delish.

I like this idea. I also like freckles' idea of using frozen cauliflower. I always buy fresh and then the crumbs go all over the counter and floor. The frozen is probably mushy already, so it's probably easy to turn into puree. When I've done the fresh cauliflower in the food processor it just keeps chopping into smaller and smaller pieces.

I agree with you on this. Makes great cauli-rice! The downside to using the frozen is that depending on how you prepare it, it can be too runny and more the consistency of soup than potatoes.

I like to steam not boil fresh cauli for this dish. It gets really tender but not mushy at all.

Also, to tighten up the mash a bit, I put in 1/4 cup oat fibre but have no idea if that is considered paleo.

Then I stir in the other things like bacon fat, carmelized onion and mushrooms....

I find if I only add fat + dry herbs & salt (no added liquid) and drain the steamed cauliflower (I use one one of those metal vegetable steamers that fit inside a pot & hold the veggies above the boiling water; or you could steam it in the microwave), the consistency is perfect, like real mashed potatoes.

Grains would not be considered paleo.

I wouldn't recommend oats for gluten intolerant folks either.

Coconut flour might work well. That stuff is like a sponge.

Yes I've used coconut flour too. I just have more oat fibre at the moment sitting around than I do coconut flour... the little bit of sweet coconutty taste is wonderful with the cauli-mash!

Okay, I made some mashed cauli and it came out really good!

I steamed the cauli in my rice cooker until it got very soft. Had I read the recipe on the paleo comfort food, I would have put a couple of cloves of garlic in there to soften with the cauli, but I didn't.

I used a packet of this concentrated chicken stock I got from TJ's. I stuck the very soft cauli into my Ninja prep and added the chicken stock paste, some garlic powder and after whizzing for a bit I added some additional salt.

It is excellent!
