I had the best cabbage yesterday while we were out to eat. I think they must have added some chicken stock to cook the cabbage in because the juice was so good that I had to eat it too, it was the best I've ever had.
Before starting this WOE that was one veggie I had almost forgotten about and I'm glad to be eating it at least once a week now. It's usually so reasonably priced and good for you.

Default Not fresh...but you wouldn't know it!

Have you tried this? It is hands down the best frozen veggie blend I have ever tried. Very very close to fresh! I don't have any on hand now, so I can't verify the nutritional info below (from FatSecret) but next time you are in Costco, check it out!

Oh and this:

Baked Cabbage and Bacon... adapted from C.Syfert

1 large head of cabbage
1 lb. of bacon, not thick-sliced
pepper
Optional: salt, and a drizzle of olive oil

Cut the cabbage heads into 8ths. Pepper the chunks of cabbage, adding salt and olive oil if desired. Tightly wrap each piece with 1.5-2 pieces of bacon. Wrap each individually in foil, tight. Bake them for about 2 hrs on 425.... OMG! like candy for me, the bacon browns really good, the cabbage takes on the bacon flavor... YUM!

So. Darn. Delicious.

Cabbage with bacon is unbelievable...love it!
Good tip on the frozen veggies at Costco! It's always good to have something like that for a go to meal.

Celeriac has how many carbs? its not in my carb counter book also how does it taste? I'm trying to expand my veggies.

According to google: 1 cup = 14 g total carb, 2.8 g fiber. Hmm. A little starchier than I remember. Still fine in smaller servings, I guess.

Google has a cool feature now that if you google certain basic foods like this:

I liked it, though it's a bit of a pain to work with. I think I only bothered trying it once. It basically tasted like a celery-ish flavoured turnip.

Meme, I'll try and remember to bring the recipe from home.

And, I am almost embarrassed to admit it: All this time I thought spaghetti squash was the same thing as yellow squash. I was thrilled to learn otherwise a few weeks ago. I googled how to quickly cook it (cut in half, remove seeds, poke holes in skin, place cut side down in about 1 inch water in a microwave safe dish, cook for 20 minutes) and then used it as noodles in a Chicken Alfredo. OMG! A new favorite.

About the squash, just remember that the Zucchini-green and the summer squash- yellow are the two that used to be available only in the Summer in the old days but now with all of the imports from all over the world we can have then any time.
They are the lowest in carbs. They are both about 5g carbs for 1 cup.

The spaghetti squash are about 10g carbs for a cup.

Some the winter squash are even a little higher on the carb scale and some like the Acorn and Butternut have a higher sugar content at almost 20g carbs for 1 cup.

*If you do net carbs you can subtract the fiber from the total carb count and get the net carb count.

There is a gadget that you might like called the Vagetti. It is a manual spiral slicer. You put in a Zucchinni and turn it and out comes noodles. I have stir fried mine in steak drippings after cooking the steak and it tastes just like noodles.

Celeriac (celery root) tastes vaguely like a cross between turnip and celer.
I usuall eat mine boiled till soft then mashed with lots of butter and mabe some cream, but I was served roasted celeriac the other week and it was really yummy!!

Today at the groceries they had fresh snap peas pods and I bought some. How to I find the carbs for them for the "peas" are very tiny I eat mostly for the pods. thanks

sugar snap peas are really like green beans in carbs and not like English peas which are full of starch.
I can't find them in my book right now but I know I love them and have them on my list. I know that I've read that they are about what greenbeans/string beans are and that is
4.9g carbs for 1/2 cup and
2.9g carbs if you are doing the net carbs.
