AHHHHH!

Oh my!!! that is a LOT of carbs.

well, I only had a few cubes...but prob 1/2 a cup...(it's always more than you think)

that's SO MUCH! like 14g!!! yikes

sigh..
no wonder I like it so much. hhaha!!!
well, I can keep making it for DH and DD- but I better skip it.

Yeah, winter squash are definitely maintenance food. But don't sweat it. No one ever got fat because they ate too much squash.

I used to blend it with cauliflower for a nicer tasting cauli mash.

fresh pumpkin is a nice lower carb sub for acorn or butternut.
roasted pumpkin with seasalt and crushed red pepper is sooooo good!

Another thing that just came to mind are the fiber grams in those squashes.
If You are doing net grams you can subtract the fiber from the carbs and maybe it's not as bad. But probably not that good for our WOE right now until we reach goal.

Oh well, So I guess I'll just stick to my old stand-byes.
Green Zucchini and yellow crookneck also called summer squash.

Speaking of carbs in veggies, did you all know that garlic has 1g carb in 1 small clove of a head of garlic?

I actually used to cook quite a bit of garlic and onions with my two favorite squashes but I've dropped the onion and limit garlic to 1-2 whole cloves.
I leave garlic whole now so I can see them and don't eat them but I still get the flavor.

Also I just looked up pumpkin and they are up there in carbs too.
1cup of Pumpkin=19.8g carbs

I just googled it & Self Nutrition Data says 12g carbs for 1 cup of cooked, mashed pumpkin. Maybe nobody really knows?

I'd be willing to bet that a lot of different sources would have different numbers.

I think those numbers you both found for pumpkin are -(net carbs) and have the fiber already subtracted from the total number. Also uncooked if cubed.

They're also using the net carb number a lot lately which is very deceptive because they should also show the whole total carbs.

To me the carbs are still there, they're just a little less bad with the fiber....

I compared 1-cup Cooked. Also 1 cup cooked on the other squashes and (not net carbs) but the real total carb grams.

Pumpkin carbs:
Adkins DANDR Book 2002 shows-1/2cup=9.9 (not net carbs)
1cup is 19.8 (not net)

The new Adkins Carb Counter small paperback shows only net carbs.
Canned, mashed 1 cup=12.8 (net carbs)
Cooked, mashed 1cup=9.4 (net carbs)


This web-site shows:
½ cup canned or mashed cooked pumpkin: 6 grams effective (net) carbohydrate plus 3.5 gram fiber and 42 calories
Total carbs for 1/2 cup 6g.net+3.5 fiber=9.5 total real carbs...
1 cup=19g carbs (not net)

yummmm, buttery shroomies!

back to the pumpkin debate- it makes sense Bonnie's count would be higher, as it is mashed, whereas mine was for cubed... and yes Meme, i hate that some companies will subtract net carbs for you, but i am pretty positive pumpkin is fairly low carb.
Squashes like acorn or butternut spike my blood sugar, whereas pumpkin does not (i know that isn't a scientific source, but hey i am a type I diabetic )

The most accurate counts for carbs come from the USDA website. New Atkins lists pumpkin as an induction level veggie (though technically a fruit) while acorn, butternut and other winter squashes are upper level (rung 7? 8? 9? on the carb ladder).

The most consistent/accurate way to measure any veggie is by weight. Volume can vary so much depending on size of chunks.

Most countries do not consider fiber to be a carb. It is fiber. The US is an exception. However, depending on your personal microbiome, some people can at least partially digest fiber. That's why i count total carbs and try to stay <30 per day.

That's why I compared all of the squash and the pumpkin at
1 cup cooked.
So we would be comparing apples to apples.

I suspected it would also depend on how it is cooked, so looked up raw and cooked squash & pumpkin on nutritiondata.com. Pumpkin always seemed sweeter than acorn squash to me, but it is less carby. I used weights since they are more accurate:

100g Squash, acorn, raw: 10g carbs - 1g fiber = 9g net
100g Squash, acorn, baked: 15g carbs - 4g fiber = 11g net
100g Squash, acorn, boiled: 22g carbs - 6g fiber = 16g net

100g Pumpkin, raw: 6g carbs - 0g fiber = 6g net
100g Pumpkin, canned: 8g carbs - 3g fiber = 5g net
Pumpkin, boiled, drained: 5g carbs - 1g fiber = 4g net

I don't eat them raw, but sometimes measure them raw and then steam or nuke, rather than bake or boil, then mash. 100g is a decent sized serving, 3.5 oz.

For us Americans who don't know grams..LOL
7/8 cup = 100 grams

I thought I would look in my pantry and I do have a can of pumpkin.
I am holding in my hand a can of Pure Organic Pumpkin from Sprouts Market-store brand. Here is the nutrition info from the can.
1 cup-canned-cooked
22 grams carbs
6 grams fiber
8 grams sugar
Ingredients: Organic Pumpkin
