Are the ingredients just water, cabbage and salt? That's what is in Bubbies.
If it's fermented, I think that's how it should be, not too sour.
It's those vinegar types that aren't fermented that is so sour.
That's a good idea to put it in jars. Eat some and let the rest age and make sure to keep all of the liquid so that it covers the kraut.
