Christine, now I remember that you posted it. I need to get some of that Garam Masala and or curry mix, Thanks Judy.
There is an import store not too far away so I'll look for it there. I've got everything to make it except for the spice.
Wait, I just googled it and here are the ingredients for Garam Masala.
A typical Indian version of garam masala contains:
black and white peppercorns
cloves
Cinnamon or cassia bark
nutmeg and mace
black and green cardamom pods
Bay leaf
I have all of them so I can make it now..Yay

Frontier makes a very nice Garam Masala blend. I sometimes put a spoon in some sour cream to make a dip as well as using it on roasted meats.

I've also found so many variations in the taste of squash, even for local types I buy regularly. I bought some small Carnival squashes the week of Thanksgiving, they looked pretty, but when I roasted them found they had a sort of carroty-vegetable taste that I didn't like. Not sure about how it affects blood sugar but Delicata is by far my favorite in terms of how it tastes and easy to roast because of smaller size. I also like the smaller Butternut squash when I can find them.

I sometimes roast cubes of squash along with other root vegetables like beets, carrots, onions, fresh thyme or rosemary; nice blended together and good cold the next day also or on top of a salad.

Last week I made a pot of turkey veggie soup. It was so good and all gone now. I just put up a new pot.
Veggies include: onion, carrot, celery, garlic, turnip and parsnip. Fresh parsley too. Sea salt and evoo.

I've only eaten delicata that once and it seemed pretty sweet to me. But squash are so irregular, I may have gotten an especially sweet specimen. On the other hand, I seem to be very sensitive to the carbs in veggies. Even turnips + onions, both induction level veggies, will sometimes send my blood sugar >140 if I have more than an ounce or two.

Elizellen~~thanks for the celery root videos, they look awesome!

i just made a butternut squash for my husband and he said it tasted like pumpkin pie? even without sweetener or spices. i didn't try any of it, so who knows.

Some critics say Atkins is all meat. Well, I am proof that's not the case. I eat more veggies following this lifestyle than I ever have. DH and I have been trying new veggies since summer, and I try and follow what is in season.

Our go to's:
Radish, bell peppers, celery, baby carrots, broc and caul for his lunches
Romaine or spinach salads for my lunches
Batches of mock tater salad (cauliflower) for snacks
As other folks mentioned on prior pages, I discovered roasting veggies such as turnips, beets, rutabaga, etc.
Sliced and fried radish, zucchini, etc for "French fries"
I sometimes eat 1/2 cans of green beans, or sliced cucumbers as a snack here at the office.

And this summer, we discovered baby bok choy and grilled avocado. Delish!

That is so great that you're both eating all those different veggies. I love all of them. My most favorites are zucchini, yellow squash and fresh green beans. The effect they have on our body is immeasurable.
When I see people with few wrinkles and rosy cheeks, I immediately know that they eat veggies.
Good for you!

You know, I'm glad you did this because just yesterday I saw a bin at the grocery store with all of these deferent squash and I didn't know what type all of them were...
