Ooh, that looks yummy! Think it will work properly if I bake the squash instead of boiling it? I'm afraid of over or undercooking the squash if I cook it in a way I'm not used to.

I've made this recipe and others cooking it either boiling, baking, or microwaving. All work fine and turn out very tastey.

I've boiled, baked and microwaved it before. It works fine no matter how you cook it but I prefer to cook the entire squash in the microwave. I just prick the skin all over, put it on a plate (to catch any drips) and microwave it on high until it is nice and soft. Then I cut it open, clean it out and serve.

Thought I would throw this picture in here!
I doubled the recipe (since I used a WHOLE squash? LOL)
Anyway, I added more broccoli and tomato and turned it into a couple casserole dishes. I will just throw one in the oven to reheat it when I need it later.
I LOVE this recipe! Thanks so much for posting it!
