Default Low-carb french fries

I'm not sure whether this dish has been created before, but through an experiment today I came up with some really tasty low-carb "french fries".

I cut up an egglpant into strips (like fries), dusted the strips in some seasoned soy flour, then I pan fried them until they were brown and crisp on each side. You have to turn them over a couple times, but they certainly were worth it! My husband actually thought they were french fries when he saw them. lol

When I have cooked eggplant in the past, it could get bitter. Did you have any issues with that?

No, it didn't seem bitter to me. I wonder if the bitterness you speak of is because of the variety of eggplant you used. I used the regular purple variety for the fries, but a tip I always follow is to buy young eggplants. These are the thinner, smaller ones ... they taste better and have better texture. Of course where I live, eggplant exists in abundance so I can pick and choose which ones I want.

Zucchini can work, pennick, if you slice it correctly, try to get the excess water out of it, and then fry the crap out of it. I prefer to coat the 'zucchini fries' in parmesan and fry in peanut oil.

I've made jicama fries before and they turned out pretty well. I think the texture may be similar to potato.

I made something similar to these last night and they were SOOOOOO good!!!

Slice up an eggplant and peel it

Dip in egg

Dip that in a plate of parmesan cheese, and spices (whatever you like - dont use to much salt)

Then throw in a pan with hot olive oil

Cook until crispy!

Ketchup or ranch go good with these!

This parmesan-fried eggplant looks sooo yummmyyy!
For egglpant not to taste bitter: salt (use plenty of sea salt) the slices and let them strain for 30 min. Rinse excess salt, dry and proceed with your recipe.

I was about to offer the tip to salt them to get the bitterness out, but karouka beat me to it....it really does work! I always just used regular table salt.
