Default something yummy to use up a lot of paprika?

I recently bought a new container of paprika from Penzey's. Then Mom, for reasons unknown, gave me a new container of paprika from Penzey's. Then a traveling neighbor, just back from Hungary, gave me freshly ground paprika. I know this stuff doesn't keep well. Has anyone got a favorite dish that uses a lot of paprika? None of it is the smoked kind.

Goulash immediately springs to mind. I know there's at least one recipe in the Main Dishes forum, but since it's generally pretty low carb, you can easily google for some more versions.

It doesn't keep? I've always kept mine a long time. But how about putting it in the freeze?

I agree; I keep mine in a cool (-ish) dark cupboard and it holds quite well (except that one time that meal moths got into the tin - eeew). If I had as much as you I wold double bag the extra tins (important to keep moisture out), and put them in the freezer. Look for Hungarian and Spanish recipes to use it up. If Spanish recipes call for smoked paprika just substitute; it won't be exactly the same but will most likely still taste great. If you also have some smoked then you could use them half and half.

baked fish with lemon and parsley or roasted eggplant plant with EVOO and garlic would be my first two picks.
It also makes a very pretty dip, mixed with greek yogurt- i would add garlic, and sea salt and parsley. it works for crudites or to coat chicken/fish.

lucky you! paprika is delicious.

is there a way to a beef stroganoff low carb? i don't eat beef, but remember loving that dish as a child?

You can also use your foodsaver to vacuum store the paprika. I'd leave it right in the original container. Then toss it in the freezer.

Thanks for all the suggestions.

There's a good-looking Hungarian goulash from a guy who was here briefly 9 years ago. I'll make it this week. The idea of using recipes that call for smoked paprika is good too. I'll definitely try the fish suggestion since I'm always looking for new simple fish ideas.

I'll also try freezing. Heck, I have plenty for testing.

I wish I could try the Greek yogurt thing but dairy is causing more problems than ever.

oh, that's too bad! i bet mayo would be a fine base to make a paprika dip, too.
