Like Liz said, you can substitute any other fat for coconut oil. For coconut flour, though... as a general rule, there are no direct substitutes for one "flour" to another. They all have vastly different properties. Find a tried-and-true recipe with a different ingredient.
I also agree with Liz on the necessity of having coconut flour on a paleo eating plan. I buy a bit of coconut flour maybe once a year and I'll make a treat out of it a few times a year. It's certainly not a staple of a paleo diet unless you really want it to be indulgent and full of stuff that resembles the wheat-treats you left behind.
For breadings (and I'm too lazy to ever do this) - crushed pork rinds, nut flours, parmesan cheese if you're more primal than pure paleo
For breads: flax seed + egg
For baked goods: flax, nut flours, and if you don't have the need to be low-carb, other grain-free flours like rice flour, chick pea flour, teff flour, etc. These can be a blood sugar bomb, though.
