BTW, this recipe is also great on eggplant slices baked int he oven! My fav way to do eggplant nowadays. You can do a big old sheet pan (the whole eggplant) all at one time. Takes 20 minutes per side at 425º. So it's an easy veggie for a crowd!
I bought a huge barrel of pork rinds at Sam's...thought it would be good to have them around for snacks and coating on fish/chicken. Nope, I eat far too many daily. No more huge containers for me!
(They're yummy with a sour cream/cajun seasoning dip...just sayin) lol
2 years later, I STILL don't like them! Darn! My husband looovveess them. Maybe using them in some of the recipies wouldn't be so bad, but I wish I could love just crunching away on them!
Well then you are far, far away form trying chicharones. Now THOSE can be pretty difficult to eat and try to stay in denial over- but boy, are they good.
There are times I can't even think much on meats either, it's just surreal when you contemplate it all but in the end, it is what it is.
lol Blue Dress, living in Mexico, chicharones are offered to me on a daily basis I make a lc dinner for my husband using chicharones and dried peppers made into a salsa, but I eat something different that night Meat? Oh gosh, I better not start thinking about that! :P

I love the mock french toast that is made out of pork rinds. They look like pancakes and are amazing! I use IHOP SF syrup. It has the lowest SAs that I've found so far and I use it sparingly. It's not as sweet as most other syrups though.

I get the Mac's brand at Walmart. I get some interesting looks at times as well as I tend to buy 3-4 bags at a time as they are often completely out (so I can't be the only one buying them! lol) My family loves them more than I do. They taste so much better but they did take some getting used to....
