Default Cheesy Chili Chicken (Really Easy)

You Will Need:
2 tbs. olive oil
1 tbs. chili powder
1 tbs. ground cumin
2 tsp. salt
1 clove garlic (chopped)
1/2 tsp. black pepper
1/8 tsp. cayenne
2 lbs. bonless, skinless chicken breasts
8 tbs. salsa (which ever brand you prefer)
4 oz. shredded cheese (which ever brand you prefer)

Preheat oven to 400.

Whisk together oil, chili powder, cumin, salt, garlic, pepper & cayenne. Marinate chicken.

Transfer marinated chicken to "Pam" sprayed pan & place 2tbs. of salsa on each chicken breast. Bake until internal temperature reads 165 or 20 minutes.
Top chicken with cheese & put back in oven for a couple of minutes (just to melt the cheese).

Net Carbs: 3 grams per chicken breast

Hi, this sounds great...sounds very close to one that I do....I season the chicken breast with Seasonall, brown lightly in a little olive oil in iron skillet....then pour one can of Rotel over chicken and bake in oven until done....last few minutes sprinkle with a little shredded cheddar cheese and it is wonderful...easy and one of my favorites...

That sounds really good too! What is Rotel? Where is it in the grocery store?

Hi,

It is just really easy....but I don't want to push up your carb count higher than you are comfortable with, so check the can ...you may have a little lower carb version going here.....but it is Rotel Tomatoes...and it has diced tomatoes and peppers and is found by the stewed tomatoes and tomato sauces. I use it for a lot of things. You can get it in original, mild, etc.

Well, I'll check to see the carbs...I'm staying below 20 a day, but now that I really know what it is it does sound good! Thanks! If you try any of my recipes let me know what you think...I love the cheesy chicken green bean recipe someone posted...it's great, you should definetly try it!

I made this last night - delicious! I think next time I'd use a little less cumin - I liked it but my other eater thought it was too much - really good though.
