Default Spinach and Mascarpone Cakes

Hello everyone

I am new to this forum but not to the low carb dieting. I lost two stones on Atkins for my IVF attempts. Unfortunately, I had to drop dieting during my twins pregnancy and breastfeeding. So, I gain a lot during pregnancy and over my maternity leave. Finally, I found some inner strength to return back to Atkins to get back in shape. I am a great foodie and it doesn't help when you are trying to loose weight. So, I am constantly trying to come up with new recipes to keep myself going and not get bored. I just came up with the new one, Sweet Spinach Cakes, and shared it on my blog www.goldenapron.com with detailed pictures and instructions. The cakes worked out to be very moist and tasty, though I am still struggling to completely eliminate the taste of coconut flour which I am not too fond off. So I welcome any suggestions on this. Spinach and soften butter brought more moisture and fluffiness to the bake, so I will definitely continue to experiment with this combination.
