Cheese dip (aka Fake Nachos)
My mind has been working for some time on how to make a tasty cheese dip without the roux, the way my mother taught me. I did some searches and came up with this:

I adapted this as follows:
5 slices of American cheese
1/2 cup grated mild cheddar
1/2 cup sour cream
1 Tbsp of the vinegar from a jar of pickled peppers
I put this into a plastic bowl and ran the microwave on high for about one minute, watching carefully (don't want it to boil, right?). Then I stirred it like crazy and waited for it to cool off a bit, then dipped pork rinds into it. My craving for nachos was sated.
I'll be doing this again. And again... If I didn't have a jar of pickled peppers, I'd try using the lemon juice (maybe lime juice?) and a squirt or two of pepper sauce.
