Nice idea. I use veggies instead of noodles too. Cabbage strips with fried onion, bacon and cheese is great! Last time it was made, the bacon was fried first, then the onions, garlic and raw cabbage strips were added. 10 mins frying, or so, then grated cheese and freshly ground black pepper was mixed through, and once it was melted it was served. Deelish!
I also love coleslaw with bolognese sauce - I serve it on the side. I don't miss the pasta.
